Original Italian name: Asparagi alla Milanese
Place of origin: Lombardy, Northern Italy
Asparagus occupies a significant place in Lombard cuisine. The first tender shoots of eagerly awaited. Asparagus has excellent health-giving benefits. It is low in calories but rich in Vitamin A and B and in minerals. Asparagus sprouts taste best when fresh.
I like dishes with asparagus mainly because they have delicious taste and all of them are very simple to cook. Well, one of my favourite breakfast servings is fried eggs with asparagus.
Ingredients (serves 2)
2 bunches of fresh green asparagus
4 eggs
Parmesan cheese, freshly grated
butter
salt and freshly grated pepper
Method
Peel he asparagus if necessary and cut off the woody ends. Tie the asparagus into a bundle and place in a deep saucepan with plenty of boiling salted water. Cover and cook for about 7-10 minutes. Drain and arrange on warmed plates and sprinkle with fresh grated Parmesan cheese.
Fry the eggs lightly in the butter and place carefully on top of the asparagus. Serve immediately.

Asparagus and egg are just such a brilliant combination! I think they should always go together, by law! I poach an egg in my asparagus soup, and don’t get me started on asparagus frittata and quiche. They just go together naturally!

Hi Marta, Yes, it is a really good combination. Honestly, for me asparagus with prosciutto is much better than asparagus with eggs.
