Pasta with raw tomato sauce

Place of origin: Campania, Southern Italy

The raw tomatoes sauce is considered as the easiest one to cook from tomatoes. It takes only a few minutes get it ready. It is recommended to take tomatoes with a strong flavour. For this one that I will cook today I am going to use cherry tomatoes. Optionally fried pine nuts can be added to the garnish making its taste more elegant.

Raw tomato sauce

Ingredients for sauce (serves 4)

400g cherry tomatoes
1 clove of garlic, chopped
1 tablespoon fresh basil, chopped
2 tablespoon extra virgin olive oil
Salt and freshly milled pepper
1 tablespoon parsley, chopped
1 teaspoon dried oregano

Ingredients for pasta

350 g spaghetti or rigatoni

Mix the tomato, garlic and basil together in a bowl. Add the olive oil and season to taste with salt and pepper. Leave the sauce for 5-10 minutes for better flavour.

Cook the pasta, drain, and add to the tomato sauce. Sprinkle with the parsley and serve immediately.
